Steps to make Jalebi:
- Take a medium size bowl and mix all purpose flour, corn flour and yogurt.
- Now add vinegar and water.Mix well in circular motion for at least 5 minutes.
- Now add baking soda and give it a gentle mix.Make sure batter is lump free.
- Heat oil in a pan and add 1tbsp of ghee.
- Pour this mixture to a piping bag/ muslin cloth / tomato ketchup bottle.
- Squeeze the piping bag and make round spirals with the batter into the pan.
- Fry till jalebis are light golden.
- Drop these fried jalebis in the warm sugar syrup for 30 secs.
- Serve them hot.
- Preparation of Sugar syrup: Take one cup sugar and 1/4 cup water in a pan.
- Stir it on low flame until sugar dissolves.
- Boil the syrup and add saffron.
- Cook until you get one strand consistency in the sugar syrup.
- Once the desired consistency is attained switch off the flame and add 1/2 tsp lemon juice and cardamom powder.
- Note: Lemon avoids the crystallisation and keeps jalsbi crispy.
