Sabudana khichadi is an Indian dish made from soaked sabudana (tapioca pearls). It is typically prepared in parts of Western India such as Maharashtra, Karnataka, Uttar Pradesh, Madhya Pradesh.   1. Wash & soak Sabudana in double the water. Rest for 1 hour. Remove excess water. Then keep it 5-6 hours.
  2. Heat oil/ghee in wok/Kadhai. Add cumin seeds. When it splutter add Roasted peanuts. Saute it for few seconds. Add sesame seeds, green chillies and potatoes. Mix well. Cover it with lid. Cook it on slow flame for 5 minutes. Once potatoes tendered.
  3. Add Sabudana, rock salt & black pepper. Saute well. Cover it on slow flame for 4-5 minutes. Now add lemon juice. Mix properly. Garnish with coriander leaves.
  4. Serve hot with curd.

It is an excellent breakfast dish which is filling and won't let you be hungry till the afternoon. As we soak the sabudana overnight, making this in the morning is quite a breeze. Mix in the sugar and salt. Top with yogurt, and garnish with cilantro to serve. We make sago khichdi without the coconut, but we add pieces of fried potato, sort of like mini french fries.
