- Prepare 500 g Halloumi Cheese
- Take 4 eggs
- Prepare 1 cup Self Raising flour
- Prepare 20 ml Lime Juice

- Get 1/2 bunch Basil
- Make ready 4 Roma Tomatoes

- Take 200 g Pumpkin / sunflower seeds (soaked overnight)
- Make ready 1 Spanish Onion
Using a peeler, peel the courgette into thin 'ribbons' for the salad. Heat a griddle pan and fry the courgette then halloumi in batches. Halloumi, aubergine, harissa and pomegranate seeds are a match made in heaven. We love this halloumi salad, it's healthy, filling and perfect for lunch, dinner or as part of a feast.
Steps to make Halloumi Courgette Salad:
- Grate Zucchinh and halloumi into mixing bowl
- Add eggs, flour, lime juice and seasoning; mix until combined and wet consistently (like a pancake batter)
- Cut roma tomatoes into quarters, season and roast on 150 degrees Celsius for approximately 30-40 minutes
- Cook qunioa until soft. Use 1 part qunioa to 2 part liquid ratio.
- Chop basil and add to mixing bowl. Add cottage cheese, mix well until all combined
- Pan fry Zucchini fritters until lightly golden on both side. Approx 1 min per side
- Drain season and cook in a dash of olive oil. oven at 150 degrees for 40 min - 1 hour
- Assemble the salad; - Qunioa - Rocket - Roasted Tomato - Basil Cottage Cheese - Roasted Seeds - Zucchini Fritters
- Drizzle a dash ofolive oil and lime juice to servre
The salad is more like a relish here, and it's delicious with the fritters. I do like salty foods with sweet ones - so honey with halloumi works for me - but omit the final drizzle if you're not keen. Toss together the courgette ribbons and the mint, add the fried halloumi and drizzle with olive oil and lemon juice.
