Once — just once — I made sushi. Twice — just last week — I made this sushi salad, and I foresee making it a lot because it's so easy and good. It's a mix of brown rice, edamame, spinach, avocado, and cucumbers all tossed with a miso dressing, then finished with slivered nori and sesame seeds.

Instructions to make Spinach and Nori Salad:
- Mix all the condiments in a bowl.
- Wash spinach well and boil in water with 2 dashes of salt. Drain the excess water of it.
- Cut the spinach into 4 cm lengths. Add the spinach in the bowl and mix them well.
- Tear a sheet of nori into large flakes. Add them in the bowl and mix them again. Now your spinach salad is ready.
This sushi salad unrolls all of the quintessential flavors of your favorite sushi platter. Crisp strips of nori softened with chewy brown rice, crunchy vegetables and plump pieces of crab. Silky avocado and a peppy wasabi vinaigrette top the deconstructed California roll on a bed of baby spinach. Made of chickpeas, this salad will give you heaps of protein (just like eating tuna would). Plus, adding a nori sheet will give this vegan 'tuna' salad the right fishy taste.
