  1. Get 3-4 chicken breasts, cut into strips
  2. Take 1-2 lemon grass (only the white portions)
  3. Prepare 1 " galangal, sliced (ginger can be used as a substitute)

  5. Get 5-6 fresh red chilies
  6. Get 1/2 tsp. turmeric powder

  11. Prepare few wooden skewers, soaked in water for an hour
  12. Make ready oil to shallow fry
  13. Take lime wedges, fresh chilies and chopped coriander to garnish
Steps to make Chicken Satay:
  1. Grind together lemongrass, galangal, garlic, red chilies along with some water into a fine paste.
  2. To it add all the dry spices and 1 tbsp. oil.
  3. Marinate the chicken strips with this marinade, preferably overnight.
  4. Grease the skewers and thread the chicken strips in them.
  5. Oven grill them for 25-30 minutes by basting with the leftover marinade midway.
  6. Serve along with peanut sauce, onion roundels, lime wedges, fresh chilies and coriander leaves.
