  7. Pre heat oven and put it inside for 15 mins (add a pinch of brown sugar on top for a beautiful crust but that's an option)

To the bechamel base, we add silky sweet potatoes and a healthy amount of asiago cheese to make a rich and satisfying custard. We like baking this dish individual ramekins. Thinly sliced potatoes in a creamy, herb-spiked béchamel Finish with a layer of potatoes, topped by the last bit of béchamel. Dice the last teaspoon of butter.
